Re charting and record keeping, about the only consistent jotting down I do is of the number of words written day by day. I do keep a Daily Work Log, though it definitely veers off topic to include research, plotting ideas, how much quilting and/or exercise I'm getting done. Those maps look daunting. We keep track of our expenses and I have kept a daily diary for over 25 years.
